So for those picky eater about them veggies, what I've found that helps get the veggies in and they don't know that they are there is to hide them in food that they really like. So for starts lets take ketchup, I would take a few peas ( like a small hand full) place them in the blender with about a cup of ketchup and blend till smooth. Now the color wont look the same as it did before but if you really want then you can add some red color to the mix and it should look closer to the color of ketchup. You can do any number of veggies in that mix.
I also found making a small blend of veggies mixed up in the bender then adding that to scrambled eggs with a little cheese them my little would eat it right up. I would also mix in veggies into the smoothies that we had as a fun little treat. The key is to cover up the color of the veggies in the smoothie, frozen blueberries are really good at covering up the color.
I would also make a very finely minced veggie mix and mix it all in with ground meats. We would cook it all together and the little one never knew. I would also make soups with the veggies in it , right before the cook time was up I would puree the whole thing and add my meats or noddles to it after that and allow the soup to cook for 20 mins longer so everything had time to come together.
( Now that we have been doing this for over a year my veggie picky eater is now trying those veggies on his own.)
